Recipe of the Month: Grilled Romaine Salad
Give your summer salad an upgrade by grilling crisp romaine lettuce and topping it with smoky bacon, blue cheese, and a drizzle of ranch.
Ingredients
4 slices bacon, cooked & crumbled
½ cup seasoned breadcrumbs
1 Tbsp unsalted butter
1 garlic clove, minced
4 stalks romaine lettuce, halved
Olive oil, for brushing
Kosher salt & pepper
1 cup cherry tomatoes, halved
⅓ cup ranch dressing
¼ cup crumbled blue cheese
2 Tbsp chopped fresh chives
Directions
Preheat grill to high. Fry bacon and set aside. Toast breadcrumbs with butter and garlic until golden.
Brush romaine halves with olive oil, salt, and pepper. Grill cut side down for 1–2 minutes, then flip for another minute.
Drizzle grilled romaine with ranch, then top with tomatoes, bacon, blue cheese, chives, and toasted breadcrumbs.
